Squeezing cooked potato through fine holes breaks it down without working it, which is why a ricer gives you a light, fluffy result where beating gives you glue. The basket holds a decent load so a family portion goes through in three or four presses rather than a dozen, and the long arms give enough leverage to do it one-handed over a pan.
